Description:
Genoise is an european type basic cake. Known for its lightness and sponginess to retain sugar syrup. The original italian recipe is already in the bag and very easy to reconstituate. Excellent dietetic. Recommanded for health conscious institutions, hospitals, etc. Can be flavored, baked or frozen. Very low in fat. All natural: Made with all natural ingredients. No artificial colors and preservatives. Ready in 8 minutes. Excellent light taste and airy texture.

Yield: one 25 lb bag yields 45 cakes (9''D x 2''H) or 30 full sheet pans.

Any genoise uses:
   -entremet round shape
   -sponge cake cakes
   -rolled sponge cake, etc.

Directions:
In mixing bowl, whip up all the ingredients at high speed for 8 minutes. (until getting soft peaks). Pour into pans. Let stand 15 minutes. Bake at 400 degrees fahreineiht for 25 minutes.
Note: The batter takes its volume while being whipped in the mixing bowl (very little in the oven). It is essential that the batter, once mixed, be stiff and not liquid.

Storage parameters: Cool and dry place.

Shelf life: 12 months under storage condition. Do not refrigerate to avoid humidity.
